DARK CHOCOLATE ZUCCHINI BROWNIES
1 Cup flour 1 Cup whole wheat & pastry flour 1/2 Cup unsweetened cocoa power 1 1/2 TSP. Baking soda 1 tsp. salt 2 Cups shredded zucchini 1 1/2 Cup granulated sugar 3/4 Cut olive oil 1 tsp. vanilla extract 3 tsp. instant coffee crystals 1/2 Cup chopped walnuts
PREHEAT OVER TO 350 . IN A BOWL, BLEND FLOURS, COCOA POWDER,BAKING SODA AND SALT. IN A SEPARATE BOWL, COMBINE ZUCCHINI, SUGAR, OIL, VANILLA AND COFFEE CRYSTAL. ADD THE FLOURS AND MIX WELL. ADD WALNUTS IF DESIRED. POUR INTO A GREASED 9 X 13-INCH PAN AND BAKE FOR 35-40 MINUTES. COOL COMPLETELY AND CUT. MAKES 24 BROWNIES.

APPLE CRISP
8 Cups peeled cord, thinly sliced sugar 1/2 Cup granulated sugar 2 tsp. cinnamon 1 1/4 Cups old-fashioned rolled oats 3/4 Cup each: flour & brown sugar 1/2 Cup olive oil 1 1/2 tsp. vanilla extract 3/4 Cup chopped walnuts
PREHEAT OVEN TO 350. PLACE APPLES IN A LARGE BOWL AND TOSS WITH WHITE SUGAR AND CINNAMON. TRANSFER TO A 9X13-INCH BACKING DISH. IN A SEPARATE BOWL, COMBINE, OATS, FLOUR AND BROWN SUGAR. MAKES A WELL IN THE CENTER AND ADD OLIVE OIL AND VANILLA. RUB WITH FINGERS UNTIL FROM A CRUMBLE. ADD NUTS, IF DESIRED. SPRINKLE OVER APPLES. BAKE FIE 1 HOUR. COOL FOR 10 MINUTES. SERVE WARM WITH ICE CREAM. MAKES 10 SERVINGS.

CHEESY VEGETABLE MEDLEY
1 Can ( 10 3/4-oz )Campbell's cheddar cheese soup 1/2 Cup milk 2 Cups fresh broccoli florets 4 medium carrots thickly sliced 1 Cup cauliflower florets
MIX SOUP AND MILK IN A SAUCEPAN. ADD VEGETABLES. BRING TO BOIL, COVER AND REDUCE HEAT. COOK OVER LOW HEAT FOR 15 MINUTES, OR UNTIL VEGETABLES ARE TENDER.

Roasted a 20 lb. turkey this past weekend.....just because we like turkey. Didn't feel like making stuffing, but it seemed a shame to waste all that space, so I got creative, and instead of a bread stuffing, I loosely stuffed both front and back cavites with large chunks of onion, carrot, celery and potatoes. I always roast my turkeys with plenty of bacon and seasoning tucked under the skin ( Keeps even an older bird like this nice and moist and juicy ) and the veggies came out, if not looking all that lovely, TASTING fantastic!!! That, and my sides were done right along with the meat. Deffinatly be trying THAT again............... .

Helpful hint......buttermilk is great for dipping chicken or fish into, and then in your favorite breading. Tastes great, adds calcium and virtually no fat, and the breading sticks well too!

1/2 Cup milk 4 tsp. chocolate syrup 6 Tbsp. freshly brewed espresso 2 Tbsp. whipped cream, cocoa power for garnish
STEAM MILK IN A ESPRESSO MAKER OR HEAT IN A SAUCEPAN OVER HIGH UNTIL SCALDED. SPOON 2 TEASPOONS OF THE SYRUP INTO EACH OF 2 WARM COFFEE MUGS.POUR HALF OF THE ESPRESSO INTO EACH. TOP WITH STEAMED MILK AND A DOLLOP OR WHIPPED CREAM. LIGHTLY DUST WITH COCOA POWER. MAKES TWO SERVINGS. BUNNIE

3 Cups chilled brewed coffee 1 1/2 tbsp. sugar 3 Cups coffee ice cream (1 1/2 pints) 1 Cup soda water 4 tsp.Kahlua or other coffee liqueur 1/2 Cup heavy cream
POUR COFFEE INTO A 4-CUP CONTAINER AND STIR IN SUGAR AND 4 TSP. COFFEE LIQUEUR. PLACE 2 LARGE SCOOPS OF ICE CREAM INTO EACH OF 4 TALL GLASSES. POUR 3/4 CUP SWEETENED COFFEE INTO EACH GLASS AND ADD 1/4 CUP SODA WITH SOME WHIPPED CREAM. TOP WITH STRAWS AND LONG SPOONS.

Dill,ever try you buttermilk coating on pork chops?
I did a meatloaf in the crock..OMG~~~Very little fat and tender..mmmmm good~~
Going to experiment with the chops on Sunday.. I'll let you know.

By the way.....the non-fatal version of that coffee soda?
1 cup REALLY strong coffee 1 cup club soda 1 cup skim milk sugar to taste Good squirt Hershey's Syrup OR 1 tsp vanilla extract ( or both )
Mix well, pour over ice. Or, even better, run briefly through the blender for a coffee slushy! Wonderful!!! AND fat free........ ;D
