GRILLED ASPARAGUS & CHERRY TOMATO HERB ROASTED CHICKEN RICE SALAD
1 pkg Uncle Ben's Long Grain & Wild Rice Herb Roasted Chicken Flavor
1 Lb. fresh asparagus, ends snapped off 4 Tbsp. olive oil 1 pint cherry tomatoes, halved 1 Cup mozzarella cheese, shredded 1 Tbsp. Balsamic vinegar 1 head romaine lettuce, copped Salt & Pepper
COOK RICE ACCORDING TO DIRECTIONS. MEANWHILE TOSS THE ASPARAGUS IN TO 2 TBSP OF OLIVE OIL WITH SALT & PEPPER. GRILL OVER MEDIUM-HIGH HEAT OR BROIL THE ASPARAGUS FOR ABOUT 7 MINUTES. COOL AND CUT INTO 1-INCH PIECES. PLACE IN A LARGE MIXING BOWL. ADD THE CHERRY TOMATOES AND CHEESE. COOL RICE, THEN ADD TO THE VEGETABLES AND TOSS WITH REMAINING 2 TBSP. OF OIL & 1 TBSP VINEGAR. COOL TO ROOM TEMPERATURE & SERVE ON A BED OF LETTUCE. SERVES 6, WITH ONLY 260 HEART-HEALTHY CALORIES EACH.

Bunnie, could you do me a favor and double check that recipe you posted for Pecan Pie Muffins? I want to try it this weekend, and, reading it over, realized that it only calls for 1/2 cup of flour. That doesn't seem like nearly enough..........was it a typo??! And if so, how much is correct? Thanks..........................

Dill...Hank here, I double checked that recipe for the Pecan Pie Muffins and if there was a typo it was not Bunnie's. The recipe calls for 1/2 cup all-purpose flour Now mind you, I don't do a hell of a lot of cooking, but this recipe does not seem to contain enough ingredients to make 10 or 12 muffins in my opinion. I guess you will just have to try it as written and make adjustments from there. I don't know what to tell ya. HANK.

TURKEY TOMATO FLORENTINE BURGERS
1 pkg Uncle Ben's Long Grain & Wild Rice sun-dried tomato florentine 2/3 Cup low-sodium tomato juice 1lb. ground turkey 1/4 Cup fresh parsley chopped 1/2 tsp.each :onion & garlic power 8 hamburger buns 2Cup baby spinach 2 tomatoes, sliced
COMBINE RICE, CONTENTS OF SEASONING PACKET, 1 1/2 CUPS WATER & TOMATO JUICE INTO A MEDIUM SAUCEPAN. STIR WELL & COOK ACCORDING TO DIRECTIONS. MEANWHILE COMBINE THE TURKEY PARSLEY AND SPICES IN A LARGE BOWL. ALLOW COOKED RICE TO COOL THEN SCOOP RICE INTO THE TURKEY MIXTURE AND COMBINE WELL WITH YOUR HANDS. FROM INTO 8 BURGERS. SPRAY THE BURGERS WITH COOKING SPRAY AND HEAT OVER A MEDIUM GRILL OR BROIL FOR ABOUT 4 MINUTES ON EACH SIDE. SERVES 8, WIT5H ONLY 290 HEART HEALTHY CALORIES EACH.

Weeeeeelll.............they taste good, a bit too sweet, I think, but any more lot of things do to me. They don't really rise, I doubled the nuts and got just barely 10. My problem with them is that they're so greasy that there are puddles of butter in the bottoms of the muffin cups....yuck!
So.....I'll try tweaking them next time, bit more flour, waaaaay less butter, see how they go. Little playing and we may have something here.

STRAWBERRY CREAM PIE
1 graham cracker pie crust 1 ( 8-oz.) pkg. reduced fat cream cheese 1 ( 6 oz.) container low-fat strawberry yogurt 1 Tbsp. vanilla 1 tub strawberry flavored cool whip 2 Cups slice fresh strawberries
SOFTEN CREAM CHEESE AND BLEND WITH YOGURT, VANILLA AND WHIPPED TOPPING USING AN ELECTRIC MIXER ON LOW. POUR INTO THE PIE CRUST. DECORATE WITH STRAWBERRIES. REFRIGERATE FOUR HOURS BE FOR SERVING. MAKES 8 SLICES.

CREAM THE BUTTER AND SUGAR WELL. ADD THE REST IN THE ORDER GIVEN. MIX WELL AND CHILL ONE-HALF HOUR ROLL VERY THIN. CUT IN SHAPES AND BAKE ON GREASED COOKE SHEET IN A MODERATELY HOT OVEN (375 DEGREES) ABOUT 10 MINUTES. THESE ARE DELIGHTFULLY CRISP AND WELL FLAVORED. This bread is so quick, easy and simple it's almost criminal!
LAZY IRISH BEER BREAD
2 1/2 CUPS SELF RISING FLOUR 1 12 OZ. BOTTLE OF BEER, ROOM TEMPERATURE. THE DARKER THE BEER, THE BETTER. 2 TBS. SUGAR.
PRE-HEAT OVEN TO 375. GREASE A LOAF PAN.
IN BOWL, COMBINE ALL THREE INGREDIENTS. STIR UNTIL JUST BLENDED. POUR INTO GREASED LOAF PAN, BAKE 45 MINUTES OR UNTIL NICELY BROWNED.
THAT'S IT FOLKS! DOESN'T GET ANY EASIER THAN THAT..........

2 MINUTE CHOCOLATE SAUCE
6 OZ. CHOCOLATE CHIPS 3/4 CUP EVAPORATED MILK
COMBINE GENTLY OVER LOW HEAT UNTIL WELL BLENDED.
SERVE HOT OR COLD.
FOR EXTRA FLAVOR, ADD A BIT OF UNSWEETENED KOOL-AID IN CHERRY, ORANGE OR STRAWBERRY, SOME CINNAMON, NUTMEG, GINGER, A BIT OF CAYENNE PEPPER, OR SUBSTITUTE 1/4 TO 1/5 OF THE MILK FOR IRISH CREAM OR GOOD WHISKEY!
