3/4 cups butter 1 cup brown sugar firmly packed beat till creamy add 1 egg and mix well add 1cup apple sauce 1 1/2 cup oatmeal mix well sift and mix together 2cup of flower 1/2t B. soda 1/2t Cinnamon 1/4t nutmeg 1/4 clove 1/2 cup nuts or raisins oven 350 bake for 12-15 min

Snowballs
2cups sifted flour 3/4teaspoon salt 1cup butter or margarine 1/2cup sugar 1tablespoon vanilla evtract 1cup chopped pecans 3/4cup confectioner sugar
Preheat oven at 325F;sift flour and salt:cream butter and granulated sugar until fluffy;add vanilla.
Stir in flour mixture then pecans. Dust hands with confectioner sugar and roll the dough into balls and bake for 25mins or till light brown.Cool and then roll them in the confectioners sugar.
These cookies will keep for 2week in an airtight container:do not freeze them

ZUCCHINI BREAD 1C. flour 1t. Cinnamon 1t baking soda 1/4t. baking powder 1t. salt 1C.chopped nuts or raisins 2C grated zucchini
Mix all ingredients well Add 2C. grated zucchini mix till well,blended.scrape bowl often & keep mixing after adding zucchini. Pour into 2 - 9x5x3 greased &floured pans.Bake 1 1/2 hrs. at 350. let cook in pans on rack. Bunnie

Oh Man-Just in time!
Zucchini Fritters 1 lb zucchini coarsly grated Ground Black pepper 1 Large Egg 2 Scallions, finely chopped 1/2 c all purpose flour_Im going to try cornstarch - do not want refined flour--wayy to much sugar anyway back to recipe 1/2 c olive oil a little salt
Salt the zucchini with about 1 tsp of salt.
Try to remove excess moisture by either squeezing with paper towels, or with a potato ricer.
Whisk egg in a large bowl,add the zucchini, flour, scallions, adn 1/4 tsp of pepper.Mix to combine well.
Heat oil in a large skillet over medium heat. Cook fritters in two batches. Drop six mounds of batter( 2 Tsp each ) into the skillet. Flatten slightly. Cook turn over once, until browned, 4-6 min on ea side. Transfer to a paper towel lined plate. Repeat with remaining batter..
Use a larger the regular dinner plate!
The cool temps are approaching, zucchini recipes are everywhere..
These fritters will look like large and I mean large crab cakes(yum).

IRISH SCONES (Mom's recipe)
1/2 cup butter 4 cups flour 2 tspn. baking powder 1/2 tspn. salt 1/4 cup sogar 1 egg 1 cup milk ( I know she would use 1 to 1& 1/2 cups buttermilk in place of regular milk and 1/2 C butter.)
Preheat oven to 425
*In a large bowl, combine butter and flour and mix with your fingers until crumbly. *Add baking powder, salt and sugar.
*In a separate bowl, beat egg and milk. Mix in dry ingredients to make a dough. *Turn mixture onto a floured surface and roll to one inche thickness or pat carefully with hands. *With a cookie cutter or the bottom of a drinking glass, cut dough into two inche rounds. *Place on greased cookie sheet about an inch apart. *Bake for 15 minutes.
You can also add raisins, dates or other dried fruits to the dough. (About a cup)
Makes about 18 scones.
Mom says "Don't "play" with the dough too much with your hands or it will dry out too quickly."

This was my dinner tonight:
Hot Italian Veggie Subs (This makes about 6.)
1 medium zucchini, cubed 1 large bell pepper 1 large onion black pepper 1-2 cups tomato/spaghetti sauce
Add olive oil to large skillet over high heat. Cube zucchini, and add to skillet. Clean and chop bell pepper. Add to skillet. Clean and chop onion. Add to skillet.
(I've found the timing with the cleaning and chopping to be perfect, as the onion takes less time to cook than the pepper, and the pepper less time than the zucchini.)
Add black pepper, and stir veggies occasionally. Cook until veggies soften a bit, (I have yet to time this actually) then add tomato/spaghetti sauce. Reduce heat and simmer for a minute or two to heat sauce.
Spoon out onto Italian subs / hoagies / rolls, and top with mozzarella cheese.
Sometimes if I'm lazy, I'll just forego the bread and put directly into a bowl and eat it as-is.

Dave's Lemon-Pepper Veggie Wraps (Warm)
In large skillet, over medium-high heat, combine: 1 small to medium yellow squash, chopped 1 green bell pepper, chopped 1 large onion, chopped ground black pepper lemon juice concentrate (to taste)
Add a small amount of water, and cover. This will help steam the veggies as they cook and help cook in the lemon flavor. Cook until veggies get soft, then remove cover to let steam escape. (I find the fan above the stove to be great for this.)
If desired, chop some mushrooms and add to last 3-5 minutes.
Spoon out into burrito-size wraps. (I prefer Manny's Low-Carb, not because they're low-carb, but because they are quite soft and flexible, and don't tear that easily.) Wrap, and hold closed with toothpicks.
Variations: 1) Add cheese. I prefer cheddar with these, but that's me. 2) Add diced tomato and shredded lettuce before closing wrap. 3) Add tomato and lettuce as above, but forego the lemon concentrate, and top off the lettuce with a bit of your favorite salad dressing. (I love the Vidalia Onion dressing.. Perfect for these!)
Dave's Cold Veggie Wraps (Great for summer lunch, or a quick snack.)
When I make these, I prep all the veggies (for a double batch usually) ahead of time, and keep the mix in a tupperware container in the fridge, so I can make some over the next day or two. I brought these in a cooler to Faire most days last year, but I've been lazy this year and haven't wanted to go to my car.
1 cucumber, finely chopped. 1 onion, finely chopped. (I prefer Vidalia for these.) 8 oz mushrooms, finely chopped
Finely chop 1-2 tomatoes. (Dependent on type and size. I normally get 1 large beefsteak, or 2 Roma.) (If storing, keep separate in a tupperware container to minimize everything getting juicy.)
Add mix to wrap and add lettuce. If desired, top with cheese and prefered salad dressing. Quick, easy, and lite.

FOOLPROOF 2 MINUTE FUDGE
ingredients needed 1 bag chocolate chips 1 can sweetened, condensed milk 1tsp. vanilla
(optional, 1 cup chopped walnuts or peanuts, or 1 cup chopped nuts plus 1 cup mini marshmallows for Rocky Road )
Place all ingredients in microwave safe bowl. Nuke on high for 2 minutes. Chocolate will be shiny, but not liquid, this is fine. Stir briskly until thoroly combined. Spread into glass pan, chill, cut and serve. Simple!
Note, when adding the milk, don't worry about scraping the can clean....too much, and your fudge will be runny!
For Mexican Fudge, add to the basic mixture 1 tsp. cinnamon, 1/2 tsp. clove , 1/2 tsp allspice, 1/8 to 1/4 cayenne pepper, ( or to taste!)
Store in airproof container for 2 - 3 days.

Not really a recipe but funny just the same: This is the BEST Christmas Cookie recipe EVER!
Christmas Cookies: 1 cup of water 1 tsp baking soda 1 cup of sugar 1 tsp salt 1 cup of brown sugar Lemon juice 4 large eggs 1 cup nuts 2 cups of dried fruit 1 bottle Jose Cuervo Tequila
Sample the Cuervo to check quality.
Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer... Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar...Beat again.
At this point it's best to make sure the Cuervo is still OK, try another cup ... just in case.
Turn off the mixerer thingy.
Break 2 leggs and add to the bowl and chuck in the cup of dried fruit,
Pick the frigging fruit off floor...
Mix on the turner.
If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver.
Sample the Cuervo to check for tonsisticity.
Next, sift two cups of salt, or something.
Check the Jose Cuervo.
Now shift the lemon juice and strain your nuts.
Add one table.
Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner.
Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

ok this comes from Sir John's grandmother that I have used for years to. Its more like a cake then bread.
2 or 3 unpeeled zucchini cutup- 2 cups 1 cup oil 2cups sugar 3 eggs 2 teaspoons each soda and powder 3 cups flour 1 tablespoon cinnemon nut and raisins op
remember this can be baked as bread or a cake which I do so you watch the time

CLASSIC CHOCOLATE FONDUE 10oz.semisweet or bittersweet chocolate 2/3 cup heavy cream 2 Tbsp.rum, Kahlua or cognac
Cut chocolate into small pieces & combine with cream and liquor in a fondue pot over low heat. Mix until blended and keep warm over low heat. Serve with strawberries,banana chunks,orange & pineapple segments,vanilla cookies or pound cake cut in squares. Makes 6 servings. Bunnie

Microwave Peanutbutter fudge!
1 cup butter 1 peanut butter 1 teaspoon vanilla extract 1 pound of powdered sugar
Microwave butters on high 2 minutes. Stir and microwave again, two minutes on high. Add vanilla and sugar. Stir quickly with a wooden spoon. Pour into a greased/waxed paper 8 by 8 pan and put into the fridge until cool. Cut and serve. Oh! so good!

You're quite welcome! Now, if you want to REALLY impress, take the recipe and instead of pouring it into a pan for fudge, chill it, roll it into bite size balls, roll those in coco sugar, sprinkles, instant hot chocolate powder, crushed nuts, etc., and you have super simple chocolate truffles!
For further flavors, try a bit of unsweetened koolaid, cherry, strawbery, raspberry or orange, use the spices in the fudge recipe for mexican, mix peanutbutter and powdered sugar, roll into tiny balls, then the truffle mix around it for peanutbutter 'cups', use your imagination. Chopped nuts and dried fruit, crushed mint candies, etc. My favorite, sub about 1/4 the condensed milk with Bailey's Irish Cream!
You can also use white, milk or other flavors of chips. White chocolate with crushed pecans is wonderful. Roll those in powdered sugar.
A tray of several kinds is a hit at any kind of gathering, and looks really impressive....no one will have to know how simple they actully are!
