An additional note to the roasted cauliflower recipe on the previous page..........made it again today, added powdered cheddar cheese to the flour. Yum! Cheesy cauliflower!

HAM & WILD RICE SOUP
2 Cups diced cooked ham 3/4 Cup uncooked wild rice 1 medium onion chopped 1 ( 1 lb. ) bag frozen mixed vegetable 1 Can ( 14 oz. ) chicken broth 1 can ( 10 3/4 oz. ) cream of celery soup 1/4 tsp. pepper 3 Cups water 1/2 cup half-and-half
DIRECTION
Thaw frozen vegetables and drain. In a 3- or 4 quart slow cooker, mix all ingredients except the half-and-half. Cover & cook 6 to 9 hours. Stir in half-and-half. Increase heat setting to high. cover and cook 15 minutes more. make 8 servings.

DATE NUT PUDDING
1 Cup chopped dates 1/2 Cup chopped nuts 3 eggs, well beaten 1 Cup sugar 1/2 Cup flour 1 tsp. baking power 1/2 tsp. salt 2 Cups milk 1 tsp. vanilla
COMBINE ALL INGREDIENTS IN A 1 1/2-QT. UNGREASED CASSEROLE DISH. BAKE UNCOVERED AT 350 DEGREES. TEST AFTER 40 MINUTES. IT'S DONE WHEN THE TOP IS BROWN AND CRUSTY AND A KNIFE COMES OUT CLEAN. SERVE WARM WITH WHIPPED TOPPING OR VANILLA ICE CREAM.

TOASTED BARLEY WITH MIX VEGETABLE
1/2 Cup uncooked hulled barley 1 Can ( 14 oz) chicken broth 2 large onion, chopped 2 Cups julienne carrots 6 Cups sliced mushroom 1 Large red pepper, chopped
SPRAY 12-INCH SKILLET WITH COOKING SPRAY.COOK BARLEY OVER MEDIUM HEAT 3 TO 8 MINUTES, STIRRING UNTIL BROWN. REDUCE HEAT TO LOW AND ADD BROTH. COVER AND SIMMER 40 MINUTES. STIR IN REMAINING INGREDIENTS EXCEPT GREEN ONIONS. HEAT TO BOILING, THEN REDUCE TO LOW, COVER AND SIMMER 20 MINUTES OR UNTIL VEGETABLES ARE TENDER. SPRINKLE WITH GREEN ONIONS.

SHRIMP AND PAELLA
6 OZ turkey kielbasa. cut into slices
2 Red bell peppers, seeded and chopped
1 Onion, chopped
4 Garlic clove, chopped
1 (8-OZ) bottle clam juice
1/2 tsp. saffron threads,crushed
3/4 Cup long-grain white rice
1 Pound shrimp, peeled and divined
1 ( 15 oz.) can artichoke hearts, and quartered
1/2 Cup frozen peas
SPRAY A LARGE NONSTICK SKILLET WITH SPRAY AND SET ON MEDIUM HEAT, ADD KIELBASA TURNING FREQUENTLY UNTIL BROWNED. ADD ONION,PEPPERS AND GARLIC AND COOK 5 MINUTES.STIR IN THE CLAM JUICE AND ADD RICE. REDUCE HEAT AND SIMMER, COVERED, 15 MINUTES ADD SHRIMP. ARTICHOKE HEARTS AND PEAS. COOK 5-10 MINUTES LONGER. SERVES 6

MUSTARDY POT ROAST WITH VEGETABLES
3 Tbsp. flour 1 tsp. salt 1 tsp. pepper 1 eye-round roast (21/2 pounds) 1 tsp. canola oil 1 (24 oz.) bag frozen vegetables for stew 1 (10 3/4-oz. ) can reduced-sodium, reduced-fat condensed cream of mushroom soup 1 Tbsp. coarse-grained mustard 1/2 tsp. Italian seasoning
MIX FLOUR, SAL & PEPPER IN A BOWL. SPRINKLE 1 TBSP. OVER BEEF AND BROWN IN OIL IN A LARGE NON-STICK SKILLET. COMBINE VEGETABLES WITH REMAINING FLOUR MIXTURE IN A 5-6 QUART SLOW COOKER. PLACE BEEF ON TOP OF VEGGIES. MIX SOUP WITH ITALIAN SEASONING AND MUSTARD POUR OVER BEEF. COVER & COOK 5-6 HOURS ON HIGH WHEN DONE, CUT BEEF AND ARRANGE ON PLATER. TRANSFER VEGGIES TO BOWL. POUR THE SAUCE INTO A MEDIUM SAUCEPAN AND BRING TO A BOIL UNTIL REDUCED ABOUT 6-8 MINUTES SPOON OVER VEGGIES AND SERVE. SERVES 8

Little note here........if you've never tried those frozen stew vegetables in the bag, they're quick and easy, for sure, but the quality sucks. If you don't mind spending the time, you're much better off using fresh!

SPRING ROASTED ASPARAGUS
1-1 1/2 LBS FRESH ASPARAGUS OLIVE OIL LEMON PEPPER SEASONING LEMON JUICE
CLEAN AND PREPARE ASPARAGUS FOR COOKING TOSS JUST TO COAT WITH OLIVE OIL SPRINKLE TO TASTE WITH LEMON PEPPER SEASOING SPRINKLE LIGHTLY WITH LEMON JUICE TOSS WELL
SPREAD ON COOKIE SHEET AND ROAST IN A PREHEATED OVEN AT 400 UNTIL LIGHTLY BROWNED AND SOFTENED, OR, FOR A MORE INTENSE FLAVOR UNTIL WELL BROWNED.

LINZER TARTS
1 Cup butter or oleo 1 Cup granulated sugar 2 Eggs 1 tsp. almond extract 3 Cups unsifted flour 1 tsp. baking power 1/2 tsp. salt Confectioner's sugar Raspberry preserves
IN A BOWL, CREAM BUTTER AND ADD SUGAR. BLEND IN EGGS AND ALMOND EXTRACT. ADD FLOUR, BAKING POWER AND SALT. MIX THOROUGHLY. CHILL DOUGH UNTIL FIRM. DIVIDE DOUGH INTO 4 PARTS AND ROLL OUT ONE PORTION AT A TIME. CUT 18 COOKIES ABOUT 2 1/2 INCH ROUND. REMOVE THE CENTER FROM HALF. BAKE AT 375 DEGREES FOR 8-10 MINUTES. SPREAD HALF WITH RASPBERRY PRESERVES AND PUT COOKIES WITH OUT HOLE IN TO ON TOP. SPRINKLE WITH CONFECTIONER'S SUGAR.

HUSH PUPPIES
2 Cup white cornmeal 1 tsp baking power 1 onion finely chopped 2 stalks celery, finely chopped 1 Cup buttermilk 1/4 Cup shortening, melted 1/2 tsp. each: black pepper & paprika 2 eggs vegetable oil for frying
mix together everything except the oil. Refrigerate while oil is heating. Pour 3 inches of oil into a deep skillet or fryer. Drop batter in by tablespoons and fry until golder brown. Drain on clean paper bags, sprinkle with salt and serve hot with cat fish, trout or shrimp. server 4-6.

1 LOAF FROZEN BREAD DOUGH, THAWED BUT NOT RISEN 1 STICK MELTED BUTTER 1TBS CHOPPED GARLIC 1/2 TSP ITALIAN SEASONING BLACK PEPPER TO TASTE 8 OZ. SHREDDED CHEESE OF CHOICE
CUT OR PULL DOUGH APART INTO SMALL PIECES. DIP PIECES IN BUTTER MIXED WITH GARLIC AND SPICES. PILE DOUGH BITS TOGETHER ON GREASED COOKIE SHEET, SPRINKLING LIBERALLY WITH CHEESE AS YOU GO. MOUND LOOSELY INTO LOAF SHAPE. LET RISE ACCORDING TO DIRECTIONS ON BAG. BAKE AT 350 ACCORDING TO DIRECTIONS, OR UNTIL NICELY BROWNED. GREAT WITH SPAGETTI, SOUP OR SALADS.

4 LBS. ground pork 6 Cloves garlic, minced 1 Tbsp. each: sale & red pepper flakes 1 1/2 tsp, black pepper 1 1/2 Tbsp. fresh sage minced
PLACE ALL INGREDIENTS IN A BOWL AND MIX TOGETHER THOROUGHLY SHAPE INTO PATTIES AND COOK IN A SKILLET OVER MEDIUM HEAT UNTIL BROWNED AND COOKED THROUGH. MAKES ABOUT 20 BREAKFAST PATTIES. FREEZE LEFTOVERS.

PECAN PIE MUFFINS 1 Cup brown sugar, firmly packed 1/2 Cup all-purpose flour 1/2 Cup chopped pecans 2 eggs beaten. 2/3 Cup butter softened PREHEAT OVER TO 350 DEGEES. LINE MUFFIN TINS WITH MUFFIN CUPS. IN BOWL, STIR TOGETHER BROWN SUGAR,FLOUR AND PECANS. IN A SEPARATE BOWL, BEAT EGGS AND BUTTER UNTIL SMOOTH. STIR INTO DRY INGREDIENTS UNTIL COMBINED.
