Oh just thought of something. Once you fried the eggplant you could also take cooked Italian suasage and lay on top of the eggplant and add the cheese and sauce.

I love eggplant, and usually just bread and fry myself, but a lovely idea, especially when there's lots of other fresh produce around ( and MUCH healthier than fried ) is a simple eggplant stew. Start with good quality chicken or beef stock, cube up the eggplant ( I don't peel mine, that's up to you ) along with summer squash, onions, peppers, celery, corn, cabbage....pretty much whatever you like and have available....and plenty of fresh tomatoes. Heavy on the eggplant and tomatoes. Add a bit of good olive oil, salt and pepper to taste, and stew until everything is well broken down. If you have fresh herbs, or even dried, you can add them to taste. Italian types are best...oregano, basil, thyme, rosemary. Or, just keep it pure and simple. This will taste best left to sit over night, giving the flavors time to marry. Serve over rice or pasta, or just by itself, with plenty of crusty bread for mopping up the juices! If you want to add meat, Italian sausage works well, or try boneless chicken breast. Just a nice way to utilize all the fresh summer veggies.
You can also toss cubed eggplant into any pasta sauce and just use as you normally would, and if you want to try the eggplant Parmesan and cut back on the fat, 'oven fry' the eggplant first, by dipping the silces in egg whites and crumbs ( I use Italian seasoned breadcrumbs, again, up to you ), baking on a cookie sheet until tender, then proceeding with the recipe. That'll eliminate most of the fat excepting the cheeses.
Try veggie kabobs too, anything you like, brushed lightly with olive oil and seasoned to taste.
Hope that helps! Oh, and don't let the eggplants get really big before you pick them. The bigger they get, the tougher and more stringy, and the flavor will become strong and bitter. Used to grow 'em a lot myself!

Well, this year's garden is going to be well planned. We start planting this week. Peppers go first. Whee!!!
On the agenda for this year:
Tomatoes: (Early girl, Big Beefy, and one other variety we're giving a try this year) Sweet Peppers: Lady Bells (green and red), Big Bertha, a couple plants of a new variety. (Purple Beauty were the new ones last year. I don't remember what we got for the trial run this year..) Cucumbers Yellow/summer squash Zucchini Eggplant (Trial run this year) Hot Peppers - Jalapeno, red chili, Anaheim chili, cayenne
Then some greens to throw in..
We've passed on the potatoes this year. Easier to go buy the big sack at the store. Same reason we don't bother with onions. We might give carrots a go this year, but we're not sure just yet..
So, that'll give you an idea of what I'll have to play around with. Come Faire, I'll prolly bring some fresh veggies to throw on the grill at Hank and Bunnie's next to the burgers and dogs. I'm sure that'll give a few people a treat!

Oh yeah.. A combination that I stumbled across while playing around in the kitchen late last year... When I started I was thinking "I'm going to stir fry some chicken and toss in stuff as I go." Came across a personal favorite recipe, and very simple too.. By far the simplest "stir fry" I've ever done.
cubed chicken, cooked through steamed baby carrots, sliced sliced mushrooms Add peanut sauce, and heat to simmer.
Put over white rice.
When I'm feeling lazy, I take two big shortcuts. I buy the sliced mushrooms, as they're the same price as the whole mushrooms.. And you can just open a can of sliced carrots, drain, and add them straight from the can. Vast majority of the time is cooking the chicken.

If anybody needs oregano, fresh or dried, let me, I have plenty! I've resolved not to let my oregano patch eat the rest of the garden this year, and it produces far more than I could ever use.

BB, Early girls tomatoes and Big Beefy ones, are awesome. Yearly I did tomatoes, will not be able to plant for a while, tomatoes not in the diet-to acedic and I LOVE THEM! It's the Italian in me.. Will be doing zucchs and other veges..
I love planting fresh veges and herbs..Basil is the best! Genovase ...other types are not that successful

Crap.. I forget which varieties, but there are a couple low acid varieties. One red that I saw the other day, and green tomatoes.
Maybe you just have to find one that is less acidic instead of non-acidic?
And Dill, I'm sure I'll have some offerings to the Pickle Goddess.. Just what and how much is the question!

Lady Catharine....any variety of yellow tomato is low acid. Used to grow 'em all the time, since I have the same problem at times. Fortunatly, I can still eat the others ( not a speck of Italian....I just love tomatoes! ) The little yellow pear tomatoes....I think they're currently calling them 'teardrops', are wonderful to munch out of hand, and so low acid you can stuff yourself silly without a twinge! ;D

Dill, nothing but nothing beats red tomatoes. A little mozzarella cheese, add fresh Basil that's topped over Foccia Bread quartered. now thats a refreshing summer salad, drizzled with Balsamic vingarette. I would not be content with un-red tomatoes.. this is not the end, only a brief hiatus.. AS long as I monitor my intake and take meds 1 x day I feel great... Had Mussels last week along with Shrimp Scampi, howere' NO FReSH BREAD dipped in EVOO..
Grease be it in different forms is WICKED, WICKED< WICKED>.

Yeah, I agree, nothing beats a big juicy ripe red tomato.....especially fresh from the garden and still warm from the sun. However, when you're desparate, well, yellow's better than nothing! Thank gods for Zantac......pop one of those and I can eat the red ones without a problem. ;D

Had an upper Gi 2 mons ago,, I feel great,cept, snuck 1 slice of swiss sunday and this morn, felt like a 500 pound hefer...bloated as all get out..
Back to weight watchers dinners for a bit..no cooking only on wknds.... PS and I went to the nursery on sunday and did buy the low acedic toms..I'll give it a try..
Im doing dif veges this year, zucchine , cukes, celery and the little orange toms.. we shall see..

Ow. I actually probably SHOULD be on something stronger, just can't afford to! Pop Zantacs like candy some days. Still, it works for now, so I'm not complaining! And I've learned what foods to avoid at all cost, like orange juice, which'll KILL me..........so it's mostly a matter of paying attention. Royal pain in the ass, as I'm sure you'll agree.......though you're a lot worse off - I can still eat a piece of cheese without it comming back to haunt me!

The Definate NO No's, OIL any form or shape. No milk products, lowfat and FF okay,Ill do lowfat Def NO TOMATOE sauces.. No cream soups..
NO CHOCOLATE ..that makes me up-chuck like ..well..nuff said...TMI and the list continues.. i love Keebler Whole Grain crackers..
any grains are the best ...
