ZUCCHINI LOAF CAKE 3 EGGS 2 Cups sugar 3 tsp.Vanilla 1 Cups all-purpose flour 1 Cup vegetable oil 1/2 tsp. baking powder 1 tsp salt 1 tsp. baking soda 3 tsp. cinnamon 1 Cup chopped walnuts 2 Cups peeled and shredded zucchini
Beat together eggs, sugar, vanilla and oil. Add flour and the rest of the ingredients. Mix well. Pour batter into a greased loaf pan and sprinkle with extra cinnamon and sugar. Bake at 350 for 45 to50 minutes or until a toothpick comes out clean.

BAVARIAN BEER FONDUE
1 1/2 Cups Dark Ale 2 Clover Garlic, Minced 8 oz. Mild Cheddar Cheese, Shredded 8 oz Sharp Che dded Cheese, Shredded 2 Tbsp. Cornstarch 1 tsp. Dijon Mustard
DIRECTIONS
In a fondue pot over medium heat, mix beer with garlic until bubbly. Add cheese and cornstarch slowly while mixing. Stir in mustard and keep warm over low heat. Serve with sourdough bread cubes, apple slices, sausage or potatoes. Makes 4-6 servings. Bunnie

FINNISH APPLE MERINGUE
2 Tbsp.butter or margarine 1/2 Cup firmly packed Brown sugar divided in half 2 tsp. cinnamon, divided 2 Cans ( 20-oz. each)pre-sliced apples 3 egg whites 1/2 Cup sugar Pinch of salt
DIRECTION
Melt butter in the bottom of shallow 1 1/2-qt. baking dish. Sprinkle with half the brown sugar and cinnamon. Arrange apple evenly. Sprinkle with remaining sugar & cinnamon. Beat egg whites until foamy. Slowly beat in sugar and salt. Combine until stiff peaks form. Swirl on top of apples. Bake at 325 degrees for 35 to 40 minutes until meringue in golden.

Yum! Gotta try both of those! And I'm thinking the beer fondue would be good with cubes of beef too.
5 Minute Strawberry Smoothie
12 ice cubes 1 cup skim milk ( or whatever you prefer ) 1 10 oz. container frozen strawberries, partially thawed
Pulse in blender for 30 seconds, or until well blended. Pour and enjoy!
Note: You can use a cup of fresh strawberries instead of frozen, add sugar to taste. For a peach-strawberry smoothie, add one peeled, very ripe fresh peach, cubed. Don't use canned.

SWEET POTATO FRENCH FRIES
2 Medium sweet potato peeled 2 Tbsp. olive oil 2 Cloves garlic finely chopped 1/2 tsp. dried tarragon Salt & pepper to taste
DIRECTIONS
Cut each potato into 1/2 inch-thick slices. Cut each slice lengthwise into 1/2-inch strips. Place in a shallow blow or plastic bag. Add oil,garlic and tarragon with a dash of salt of pepper. Toss until coated. Spread on a lightly greased cooking sheet and bake at 425 degree's until tender, about 15 minutes. turn once. serves 4 Bunnie

ORANGE SLICE COOKIES
4 Tbsp.butter softened 2 Cups brown sugar 2 tsp. water 4 Eggs, beaten 2 Cups all-purpose flour 1 tsp. Cinnamon 1/2 tsp. Salt 1/2 tsp. baking power 1 Dozen orange slices, cut 1/2 Cup nuts, copped Confections' sugar for dusting
DIRECTIONS
In a bowl, cream butter,sugar and water. Add eggs and beat well. Add dry ingredients and mix. Fold in orange slices and nuts. Pour batter onto well-greased floured pizza pan. Bake at 300 degrees for 30 minutes. Dust with confectioners' sugar while warm. Cut into thin slices. Makes 3 dozen wedges,

Bunnie.....the cookies sound good, but question....what kind of orange slices, the candy ones, or real orange? Just curious....altho I suppose either could work.

GREEK YOGURT WITH SOUR CHERRY PRESERVES,WALNUTS & HONEY
20 Walnut halves 4 pint thick Greek yogurt 1/2 Cup sour cheery preserves 4 tsp. honey
DIRECTIONS
Preheat oven to 350 degrees. Spread the walnuts on a baking pan & toast about 12 minuets until light brown. Cool on a plate. Spoon the yogurt into four shallow serving bowls.Top with the cherry preserves, drizzle with honey & top with walnuts. serve immediately. Bunnie

I will try those cookies with both one of these days....altho be forewarned, using real oranges, with their high acid content, could easily throw off the recipe. Just have to experiment and find out............ ;D
BBQ Corn
6 ears fresh sweet corn, husked and ready 6 sheets heavy foil big enough to wrap corn well
For BBQ butter....... 1 stick butter, melted, in bowl 1 tsp salt 1/2 tsp black pepper 1/2 tsp, or less, to taste, chili powder 1/2 cup your favorite BBQ sauce
Combine all ingredients well, brush liberally on ears of corn, wrap well in foil, grill or bake in 350 oven about twenty minutes, or until done.
To up the BBQ quota, unwrap when done, brush with straight BBQ sauce, return to heat, unwrapped for another 5 minutes, or until sauce begins to 'set up'.
For spicy corn, substitute chili powder for cayanne pepper to taste. Or sub all spices for 2 tsps. taco seasoning.

Anyone have recipes for eggplant? I've had it like twice in my entire life, and we're considering giving it a test run in our garden this year. I want to have ideas first though!

Fried eggplant soak in water. dust in flour.dip in eggs. cover with cornflake breading and grated 3 cheese blend. fry
Eggplant Parmisian do above and lay in baking dish.on top of eggplant put the mozzarellia cheese and cover with your sauce. Bake about 40 minutes.

Oh by the way peel and slice the eggplant. I myself don't make the slices thin. We like them thicker.
