LEMON SUPREME CAKE
1 PKG.LEMON CAKE MIX 1 CUP APRICOT NECTAR 3/4 CUP SALAD OIL 4 EGGS 1 CUP POWERED SUGAR JUICE OF ONE LEMON
COMBINE CAKE MIX, NECTAR AND OIL. MIX WELL. ADD EGGS ONE AT A TIME, BEATING WELL. TURN BATTER INTO A GREASED TUBE OR LOAF PAN AND BAKE AT 325 OF ONE HOUR. DO NOT OPEN DOOR DURING BAKING TIME. LET CAKE COOL 15 MINUTES, THEN COMBINE POWERED SUGAR WITH LEMON JUICE AND SPREAD ON WARM CAKE AS A GLAZE.

TEXAS CHILI SOUP
2 Tbsp. unsalted butter 1 Cup chopped onion 4 tsp. minced garlic 1 Lb. each: ground pork and either beef of turkey 2 ( 29 oz.) cans dice tomatoes 1 qt.beef or chicken broth 3 Cans (15-oz.) pinto beans, drained 4 stalks chopped celery 2 Tbsp.chili power 1 Tbsp. red pepper flakes 1 tsp. each: cayenne pepper & salt
IN LARGE POT, WARM BUTTER AND SAUTE ONION AND GARLIC. ADD MEAT AND COOK UNTIL BROWN. DRAIN HALF THE FAT. ADD EVERYTHING ELSE AND SIMMER 30 MINUTES TO 1 HOUR. SERVE WITH A GARNISH OF SHREDDED CHEDDAR, CHOPPED GREEN ONIONS AND A DOLLOP OF SOUR CREAM. SERVES 6.

It's that time of year, the price of corn on the cob is comming down and the quality is going up. Seems like the perfect time to share my quick and easy method of cooking it. One word, folks. Microwave. Beyond a doubt the fastest, easiest way to do it, with moist, extra-flavorful corn every time. And made even easier because you DON'T HUSK IT FIRST. Yup, trust me, just take off the extra, loose husks, DON"T worry about that blasted silk, just nuke the things in their husks for roughly 10-14 minutes for 6 ears, or until they're very hot and smelling 'corny'. A single ear takes 5 minutes. Since they steam in the husk, you don't lose flavor or nutrition like you do with boiling, and you can do several at once and simply let them cool and store them in the fridge as is.....no need for a container! When you want to re-heat, simply zap 'em again for a minute or two and then husk. And the very best part of all this? Instead of fighting to get all that pesky silk off? You're going to love it.....steamed like that, when you go to husk them, the silk will virtually fall off in your hand! SOOO much easier than trying to remove it raw! Easier to husk, too, altho you'll want to be cautious of the steam. Short of roasting over on open fire, absolutely the best way I've ever found. Trust me, try it......................

VANILLA EXTRACT SWEETEN WITH HONEY TO TASTE. COMBINE ALL INGREDIENTS IN BLENDER ON PUREE UNTIL THOROLY BLENDED. SERVE IMMEDIATLY. ENJOY! IF YOU WANT TO SPLURGE, CUT MILK TO HALF AND ADD ONE CUP VANILLA OR CARAMEL ICE CREAM! SPARKLING STRAWBERRY SMOOTHIE 1 1 LB. BAG FROZEN STRAWBERRIES, PARTIALLY THAWED, OR 1 LB. FRESH BERRIES, CUT. 10 ICE CUBES SUGAR TO TASTE 1 TSP. VANILLE EXTRACT 2 CUPS CLUB SODA, OR USE EITHER STRAWBERRY SODA OR CREAM SODA AND DON'T SWEETEN. FOR THICKER SMOOTHIE, 1 CUP SODA. Been playing around with this a bit.........toss some watermelon in with that strawberry for a lovely, refreshing strawberry watermelon smoothie! Use either skim milk, or the watermelon juice instead of the soda. A tsp. of vanilla gives it a great ice cream taste.

CARROT SOUP
4 Tbsp. unsalted butter 2 onions, sliced 1 sprig fresh thyme 21/2 pounds carrots, peeled and thinly sliced 2 tsp. salt 6 cups light chicken broth
MELT BUTTER IN A HEAVY-BOTTOMED POT. ADD ONIONS AND THYME. COOK UNTIL TENDER, ABOUT 10 MINUTES. ADD CARROTS AND SALT. COOK 5 MINUTES. ADD STOCK AND SIMMER UNTIL CARROTS ARE TENDER, ABOUT 30 MINUTES. SEASON TO TASTE AND SERVE. MAKES 8 PORTION.

VIENNESE PLUM CAKE
1/2 Cup each: butter & sugar 2 eggs 1/4 tsp.salt 1 Cup flour 1 tsp. baking power 16 blue Italian plums,halved & pitted 1/2 Cup sugar 1 tbsp. butter 2 tsp. cinnamon
GREASE AND FLOUR AN 8X8 PAN. CREAM TOGETHER BUTTER AND SUGAR. BEAT IN EGGS BLEND TOGETHER SALT, FLOUR AND BAKING POWER. COMBINE WITH BUTTER MIXTURE. SPREAD DOUGH EVENLY IN PAN. PLACE PLUMS ON TOP ,SKIN SIDE DOWN. MIX 1/2 CUP OF SUGAR WITH THE CINNAMON AND SPRINKLE OVER TOP. DOT WITH BUTTER. BAKE AT 350 DEGREES FOR 45 MINUTES. COOL AND CUT INTO SQUARES.

Won't hurt it at all to skip the corn. I just like the texture better that way. For the record, according to taste - or whatever sounds good at the moment! - you can also add crumbled bacon, diced onions and/or green peppers, diced sun-dried tomatoes, or just a good shot of coarse ground black pepper,,,,,,or, if you like spicy, sub the cheddar for pepper jack and add chopped jalapenos.

TO 1 LB. HOT, COOKED SPAGETTI NOODLES ADD THE FOLLOWING.........
1-2 LBS. GROUND BEEF SAUTEED WITH DICED ONION, GREEN PEPPER AND TACO SEASONING, AND DRAINED.
1 JAR SALSA, YOUR FAVORITE KIND AND HEAT LEVEL, HEATED.
1 JAR RAGU DOUBLE CHEDDAR CHEESE SAUCE, HEATED.
18 OZ. BAG SHREDDED TACO CHEESE BLEND.
1-2 CUPS FRESH DICED TOMATO
IF YOU LIKE THINGS SPICY, CHOPPED JALAPENOS TO TASTE.
TOSS ALL INGREDIENTS TOGETHER WITH HOT SPAGETTI AND SERVE.
I know it sounds a little weird, but it's really very good! Really!

OVEN BAKED ONION RINGS
1/2 cup dried breadcrumbs 2 tbsp butter, melted 1/8 tsp salt 1/8 tsp cayenne pepper 2 medium onions, sliced into 1/4 inch thick rings and separated 2 egg whites, lightly beaten
Heat oven to 450 degrees. Spray a large baking sheet with nonstick spray. Combine breadcrumbs, butter, salt and pepper. Dip onion rings in beaten egg then in breadcrumb mixture. Place in a single layer on baking sheet. Bake for 12 - 15 minutes.
